Chinese New Year is around the corner and this year, my family decided to start our own bakery for all the new year goodies in the house. Pilot testing of pineapple tarts, which didn't taste too bad I guess. I think it tastes decent and yummy okay. 


The crust was soft and crumbly woohoo and the fillings were slightly soury -- should have added more sugar when making the paste inside. Yes, the paste inside is handmade too!(: I think my family should just open a bakery or something? Then I can quit school and work in my own shop. (Inserts proud face).

Going to work on almond cookies this coming week I guess!! Woohoo. Dingsbakery open shop lo~~

On a more personal note, (I know you won't really see this mummy and daddy because you guys ain't too tech savvy and I would probably be too shy to tell you both in your faces), but thanks so much for being here with me. For the past 20 years of my life and for the many more years to come, I do admit that I may have taken you both for granted sometimes, always giving bad attitudes, black faces, throwing tantrums even when I'm older and doing all sorts of things that had definitely broke your hearts one too many times. And when I need you both, you both are still there, stationary at the spot you're always at, with welcoming arms and soothing voices.

Thank you so so much for being here, for forgiving all the bad things I've ever done, all the mean things I've ever said and all the ridiculous tantrums that I always throw. Thank you so much for being so accepting of all my flaws and for reassuring me from time to time. And thank you so so much mummy and daddy, for being my parents, I cannot express how blessed I am to be your child. Yes, we may not be rich, but we are coping well with life. You both try to give me the best, satisfy my material desires and constant hunger for food, giving me a shelter filled with so so much love that nobody can replace.

I really really love you mummy and daddy. And I will always be thankful that I am your child(:

So I brought someone out :D Wednesday lunches with the boy because my class is so near to his hall -- ADM building. I'm finally an art student again. For just a semester. Mai hiam buay pai la...

To be honest, being ultimate cheapos and lazy bums, we attended a networking workshop in school, which provided complementary buffet dinner...


Don't judge okay, you guys will never understand. Made new friends too!! See, evidence that I didn't go there just to eat their free food~

It was actually a really fun and interesting workshop -- we all stayed till the end even though our initial motive was the food. The speaker started off with a simple introduction of himself and the plushie Danielle, which slowly transformed into hearty game and gradually got everyone talking.

I just realised that the previous sentence sounded like a total friendzone statement but no worries, I do not have such intention and nobody likes nobody that way. How sure I am? 101% sure. Nonetheless, it was a good catchup with this dude at hall5. He was dying to talk to somebody, which explains his intentional travel across Singapore to pulau NTU.

Talked for many hours about anything and everything really..

Even though you were the one who needed to talk to someone desperately, thanks for making the effort to come all the way down. It was definitely a great catchup, with all our mega throwbacks,

Pink Sunday

I have been slogging the past 2 years with my Sony Xperia SP, which hadn't been very kind to me -- camera issues, insensitive touch pad, poor wifi connectivity, blur selfie camera, auto shut down, etc etc you name it, it happens. So I was really excited when my dad's contract ended and I will be able to change phone!! (Yea, using my dad's recontract because he used mine last year, which was because I used his the year before, and it goes on and on all because I remember my first Nokia touch screen phone failed on me in just 6 months -- final death with no signs of revival.) That pretty sums up my affinity with the choosing of phone models.

Went into the M1 Shop to recontract and I was telling mum about the phone I wanted to get and all and after multiple attempts to convince her, I succeeded. Without throwing tantrums. I'm incredible. Haha so used to throwing tantrums to get what I want -- just like a spoilt brat -- but I've grown up now okay! I'm rational and mature~ HHAHAHA.

I was faced with the challenge of choosing my phone colour. Note 4 comes in 4 colours -- black, white, pink and gold -- and because they do not allow people to see the colour any more :( I guess they don't have a sample for that) I was told to Google for the image of the phone to see the phone's colour. WHAT?! Haha but I did just that oh wells. Decided upon the pink one! Actually I kinda decided long ago, so I guess the decision then was to stay through my initial decisions. The service staff went to get the phone while mum and I just stood there thinking of what an insensible shop design layout. We went to the Tampines branch of M1 (not sure if all the shops have been renovated to look the same), and instead of the usual customer service counters we see, this place has counters 1) Scattered loosely in the center of the shop 2) With no chairs surrounding those counters (so technically the service staff has to get 'punished' with the customers as well), which I felt wasn't a very good design actually. I mean, it's so uncomfortable to stand for so long... They have long sofas along the other places of the shop though, for people to sit while waiting for their queue number to be called by the customer service staff, literally.

Fell in love with my pink phone at first sight. Haha.

Going to charge it for 8 hours, ciao~~

Surprise~~

Decided to surprise Jeremy in the morning so I bought hotcakes from Macdonalds for the boy and went to scare him in his room. A lot of effort leh! Even though it sounds like such a lame thing of buying breakfast, I had to wake up one hour earlier, walk to North Spine (all the way from hall 5, which is freaking far really), then choose something to buy (which I obviously have no idea because I haven't been eating Macs for such a long time already?) and then walk all the way back to hall 8.

The biggest challenge was actually waking up the Jeremy so that someone will open the door for me. I failed by the way. His roomie opened the door for me instead. I was like being awkward outside the room because I didn't really know what I should do -- knock or call or just try to open. So I tried to call Jeremy, which didn't work out -- he sleeps like a log. 13 missed calls, I really tried. Faced with no other options unless I am going to sit there and wait for him to wake up which is not likely to be happening any time near 9am, I knocked. Lightly at first and then a little harder because no one answered the door. AND I WAS SAVED. His roomie opened the door and peered outside, literally. And there I was, standing like an idiot at the door with the really paiseh look because I felt really bad to be waking someone up at 9am on a Saturday...

After passing the roomie his set of breakfast, I went to irritate the Jeremy - take his lazy pooh, pull the blanket, try to pull him off the bed... Hahah such a traumatising girlfriend. On a side note, lucky I bought one set of breakfast for the roomie, else it would be so bad right!! Never felt so smart~~ Hahah just keeding. We had hotcakes breakfast at the hall 8 hall area outside the computer room and then Jeremy was like saying that he can never finish all the 3 pieces of pancakes even since young. Then he said he prefer McGriddles.. How would I have known? Hahah but oh wells. Breakfast surprise checked.

Morning was filled with boredom trying to choose the schools to apply to for exchange. I really really want to go exchange - I think no amount of words or flowery language can describe how much I want to complete one semester overseas.. It is to this extent that I actually did my own research for exchange.. I mean, how often does that happen? (Probably not often but yea I guess you get the point). After finally choosing the schools that can match our cores and stuff and shortlisting those with more vacancies -- so that I will have a higher chance to be granted the opportunity, I logged on and was requested to submit this essay of not more than 500 words of why I want to go exchange.. Omg.. I mean isn't it obvious?!? Haha. But yea of course I submitted my essay.

Lunch was at the foodcourt near the Pioneer MRT where I tried my favourite duck horfun which no longer existed and was replaced by another duck stall. Disappointed. It was not nice. Bad. Hahah the gravy wasn't really good... I prefer the previous one.

Headed to pump petrol for the car, which resulted in our usual Esso shopping. We bought green tea pocky, and green tea cornetto!!! The cashier was so cute, she was like woah you like green tea ah? Started licking away after I unwrapped my ice cream!! So Jeremy said he wanted to try, he bit off the whole top part of the ice cream and I was like o-o. Then I continue eating and he said he wanted somemore, so I gave him another bite and then I was left with one third of the cone -- the pointy end by the way. D: I WAS SUPER SAD. Seriously. My ice cream :(

Went back to hall for some serious mugging and then dinner at the Bukit Timah foodcentre!!!! :P

Omurice


Tried to cook something new today! It's like an adventure everyday for me, googling and trying all the online recipes and then attempt to take instagram worthy photos of my cooked food. Haha and of course, making all my friends be food tasters. Still pretty new at this cooking thing.. some food don't turn out very well.. BUT at least I am trying!!! :D I am going to get better right?

Started school today with a ham cheese omelette sandwich for breakfast and lunch. Yea, lunch too because I have back-to-back classes this semester, specifically Tuesdays and Thursdays. I guess, this means I am going to lose weight this semester? AWESOME :D Sacrificed a little sleep and woke up a little earlier for class.. Around 9ish (not very early.. but considering that my class starts at 10.30am..) and made my way clumsily to the pantry.

My sandwich tasted awesome okay!! Because anything with cheese is awesome.

Haven't felt this for very long, because for the first time ever, I don't feel very lost in Accounting classes. Before you associate show-offs with me, do not the keyword: Very. Which means, I did feel a little confused here and there but generally I kind of understand? I think. Feels good to know what's happening actually, because I read up beforehand!! I will try to do more of such in future, but as you can see, it does require a lot of self discipline.. Like really a lot. I WILL TRY.

Tax was taxing as usual (so punny) but sort of understand some topics too and we got early release from class today! YAY!! Maybe the prof should do that every week. Haha give me something to look forward to in the 6-hour intense classes.

Dinner is cooking time as usual!! But the recipe calls for some ingredients that I haven't bought before so obviously I wouldn't have them -- onions, ketchup, eggs and cheese. Texted PeiYun and woohoo she bought them (except ketchup, we decided that we didn't need it haha) Initially I was thinking maybe Macdonalds have the packet ones.. but it was kinda far and I was being lazy as usual, so I gave it a miss. Who needs ketchup anyways? *flips hair*

I started to cook the rice under my table. Don't judge. I can explain myself. The rice cooker cable was too short, and the power socket was under the table, so obviously I have to cook rice under the table right!!! Just nice when PeiYun was back, the rice was cooked!! So the two idiots lugged their pan, food and utensils down 4 storeys (the pantry is at basement 1) and began their masterchef-ing.

Here's our modified recipe:


Chicken Omelette Rice
Ingredients:

1 medium onion (actually I have no idea whats the size of a medium onion.. My onion was like the width of half an iPhone - if that helps)
1 chicken thigh, rinsed and defrosted
1 tablespoon oil
freshly ground black peper
1.5 cups cooked rice (I used a small cup though - between the size of a shot glass and the normal rice measuring cup)
1 teaspoon of light soy sauce

Omelette (for one omelette)
2 normal eggs (those normal sized ones from supermarket)
Half an egg shell of water (alternatively, milk is fine)
1 tablespoon of oil
1 slice of cheddar cheese

Cut the onions into small pieces and dice the chicken.
Heat the oil in a pan with medium heat and stir fry the onions. When the onions softened, add in the chicken cubes until the are cooked.
Add the rice and continue stirring the food in the pan until all the rice separates into individual grains (make sure they don't clump together anymore)
Add in the soy sauce and make sure that the rice is evenly coated with soy sauce and everything.
After everything is evenly coated and all, add ground pepper and pour the food into a plate.

Rinse the pan and heat the oil with medium heat.
Beat the eggs and water and pour in into the pan.
Once the base of the egg is set, lower the heat and add the cheese slice into the center still watery mixture. Next, put the rice on top of the cheese.
Fold two sides of the cheese towards the center, kind of like a wrap. (The egg may not fully cover all the rice, it's alright.)
Continue cooking the omelette rice with low heat until desired egg consistency -- depends on whether you want to egg to be still watery or completely cooked.
Flip the egg onto the bowl and adjust the shape of the omelette.

Side vegetables are just broccoli and carrots cut into thick strips and boiled with a pinch of salt.
Ready to serve!!


It was really yummy!! No joke. Super nice. We gobbled up the food YUMYUMMMM :P

Mid Week


My Wednesday started off with my art elective class, and today we went into model drawing - with a real life nude model. Haha it was pretty alright I guess, the model was rather professional, doing all his million poses while we busily sketch away. Just curious if he actually feels awkward baring his whole bod to like so many pairs of eyes, but oh wells, I guess he's just working. Must respect everyone's profession (:

The prof's style was like a spam of papers I wanted to cry -- save Earth!! 

After class was just a nua sess with myself in my room -- just being nua as usual~ And then I was supposed to meet Jeremy for dinner and all. Kinda skipped lunch because I didnt really feel like eating.. Yea it happens. So I just chugged some cookies and no sugar soymilk into my tummy to pacify the soft rumble.


Decided to cook dinner for 2 where I made chicken chop, cheese omelette and boiled veggies, plus rice of course. The meat was a little too salty, I felt so bad because Jeremy just gobbled up the food... Sorry... I will improve.. Hopefully. The rest was alright I guess but the sauce -- I used the Campbell mushroom soup and I guess it doesn't really work because --ITS SO SALTY OMG. Hahah so yea. That pretty much concludes dinner.

On a happy note, the company that I applied my 10 weeks internship to has called to assure me of my spot in the company!! YAYYY!! Yup, she says that they are not waiting for the paper work to go through and then they can send me an official letter!! AWESOME. Super excited when I received the news, seems like I will be able to graduate after all~ Next burden will be Exchange, really want to go!!! Keeping my fingers crossed, applying on Friday!(:

Happy Birthday!!

It's finally the year, when everyone around you is turning twentyone and then there's like this chaos of twenthfirst birthday parties and all the presents and cakes and celebrations. So this is me, with my fellow art student catching up and throwback and talking about anything under the Sun -- from times we slogged ourselves through art classes to all the nitty gritty stuff that has happened thus far.

A tiny birthday treat of ice cream on waffles from Gelateria Italia situated on the top floor of Jurong Point (JP2). We decided on Matcha, Tiramisu and After Eight to go with our warm waffle ~~ The waffle was pretty good - crispy on the outside and slightly spongy on the inside. Not the best I have tried but it's a pretty decent waffle :D

I love matcha ice cream, all kinds all brands, so no comments on that. Haha the after eight flavour felt like plain mint ice cream though (I don't really know what to expect also but just a comment), small chunks of chocolate are stirred in too! Gelateria Italia provides free flow toppings at the corner of their counter too! Not a wide range but free flow!! (I supposed so, they didn't stop me when I went to take them the other time...) Mini marshmallows, rainbow sprinkles and chocolate rice are available, self-serviced... so I guess you can spam as much as you want? Haha.

Great catch up with this birthday girl and promised to bake for her next week!! :D

Study Sundays

School has been crazy really, with all the readings piling up and it's like only week 2? Sigh. Thankful that we still make time for one another even though its only a short Sunday morning and brunch.

The curry rice was pretty good actually -- interesting customisations although the menu isn't really amazing (pretty standard menus). For every rice set you order, you can actually customise like the amount of rice and the spicy level of your curry. The rice amount customisation really amazed me haha because I am not a fan of rice... And you can actually get a dollar off your bill. If you order less rice. It's like a dream come true!!

But I didn't do it, which I still regret. I was totally shocked when she asked me about my rice because I didn't really read the whole menu in detail -- totally missed out the portion that mentions about all the customisations available (a how to order section at the bottom left hand corner). I ordered normal rice amount, which I obviously did not finish~

Spiciness level starts from level 0 - mild such that it is suitable for young children. Pretty thoughtful on their side I would say... And the level can shoot up to like crazy spicy, which is level 5. I took level 0 because spicy food is not really my thing hahaha. Jeremy took level 3 and he was like downing glasses of water as he ate his curry rice.

What we ordered.

Here's my pork cutlet cheese curry rice! Doesn't look very special I know.. but it taste pretty alright! There was a lot of cheese!!! (Can't really tell from the picture because it's at the bottom) It was a really cheesy non-spicy curry ( I ordered mild spiciness) with deep fried pork cutlet. The pork cutlet was a little tough, but the overall taste of this rice is good!(:

Jeremy ordered a beef omelette curry rice with spiciness level 3 - Extra Hot. Which as mentioned above, made him finish 3 cups of water. The beef in his plate tasted like those from the canned food - tough and a little bland.. After I pinched some of his beef, I returned it to him. Hahaha. The omelette that was arranged on top of the rice was good though, it was smooth and shiny (the presentation of their dishes were really good) and soft when you eat it. YUM! 

After brunch, Jeremy drove us both back to school to start our intense mugging. Not really intense for me I guess. More like an attempt to study, which turned out pretty productive -- as compared to what usually do at home. I think staying in school just makes me more productive. Maybe I should start studying in school every Sunday..

But then again... It has always been the problem with food... Sigh..

Lazy

Saturday was a lazy day really. I was supposed to do my laundry, pack my hall and fold my clothes and guess what? Hahah I only packed my hall, haven't had the time to sweep the floor and all because I was so nua on my bed all day. Sigh. Life of dings.

Tuition today was alright but my tutee wasn't feeling very well. Got a little worried at first, but surprisingly at the end of class he was like so alive? I am starting to think if he staged all his vomitting acts and coughing and wearing his jacket. Sigh. I am just gullible ITS OKAY. At least I didn't go all paranoid as to whether he is lying to me. (But technically I am now.) Oh wells, whatever~

Collapsed into a 3 hour unwakeable slumber when I got home and it was time for dinner when I woke up. Hahaha my bed really has super powers. It seduces me to sleep and then makes me unwakeable for 3 hours...

Attended my bestie's grammy's wake too. Bestie looked really tired. Hopefully things get better for her(: Stay strong babe. Tomorrow will be a better day(:

FRIDAY!!

Can't me more thankful that Friday is finally here (and it's only the first week omg). First weeks of the semester are usually pretty chill, like all those class introductions, class expectations and groupings, ice breaker (maybe?)... you get the point. It usually doesn't touch into school work or the prof just simply won't start teaching I guess.. MAYBE THE TIMES HAVE CHANGED. Haha but yea, first week was like a mad rush of everything -- trying to cover my readings, trying to be diligent to revise my stuffs and finding out that I have so many things to revise more because some concepts are taught so so long ago.

Oh wells, went for my last lesson of the week and rushed off to interview.

My fear of being unable to secure an internship position has overwhelmed my laziness as I started to do some self-sourcing because school available ones seem so challenging and all.. Hmm not that the self-source ones aren't challenging, OH WELLS I CAN'T EXPLAIN MYSELF. I just thought self-source was a better idea.

The whole place was like towering over me after I finally reached and glad to be early really, I was so afraid that I would be late. Haha no more lateness *flips hair* The interview was nice and easy-going, especially with the bubbly assistant HR manager. She was so nice omg. We ended up just casually talking before the interview started and I guess we could converse pretty well (: She felt like a friend really.

The interview started with some more serious questions and the seriousness kind of slowly faded away as the interview progressed. It was a pretty good interview for me I would say. Now it's just the keeping my fingers crossed that I would be notified for good news. *fingers crossed*


Impromptu dinner with my ex-roomie where we went into pepper lunch (with me in my white top black skirt). Yea WHO ON EARTH WILL DO SUCH A THING? I did. Hahahaha. The meal was indeed terrifying with the immense splattering as I poured the creamy tomato sauce into my hot plate. Seeked for shelter one metre away from my food which obviously got like judgy glares from everyone but hey. My white top is at stake okay. Overall, the meal was indeed satisfying. AWESOME.

Hahaha went for a stroll in Kinokuniya, with the intention of getting an instagram-worthy shot to depict my intellectual state of mind. Obviously, it failed. So we got another one instead:


This was outside some furniture shop I guess. Couldn't really remember because we were walking and then she was like 'omg this will look good go go' and then the picture was born.

That pretty much sumed up how I ended my first week in school. It's SATURDAY tomorrow!!

Thursdate

Woke up late again which explains my 26579045830945th skipped run, okay actually I was just being lazy -- I mean, what's new right? Ironically, I was early for class~~ See I am living up to my first week on time standards. Woohoo.

Accounting class was really mindblowing -- just reminds me of how much things I don't know.. Sigh.. I guess it's time to do some revision and self-studying over the weekends! Tax class was really bad -- 4 hours. Life as a university kid. Thank god that our prof agreed to give us 2 breaks, which means some resting and noming time..

Met Jeremy outside his class today to have dinner out of school! Mini thursdate~ Heehee so happy to see the boy everyday. Took this really arduous journey across the school, all the way from S4 to Hall 8 under the unforgiving sun because the car was parked over there. Initially Jeremy wanted to collect the keys but he didn't because of some confusing reason that I think is sufficient that he understands what the hall lady was talking about -- so he's going to collect the key fob tomorrow instead... which means he has a hall already!! While I'm facing this hall crisis now. Sigh. Why must she do this to me.. It's okay. Move to hall 3 bye.

Usual car ride out of school with me squabbling non-stop or singing really badly to the music from the radio and some tiny catching of how each other's day went. Communication is key everybody~


Dinner with Jeremy at JP eating ramen in Menichi and some ice cream!! Followed by a speed shop of a pair of shoes -- bought these pair of black wedges for tomorrow's internship interview! Hope to do well because the company has already asked me to submit my not too good screenshot of my degree audit. Sigh. If only I can turn back time and start university again...

Oh wells, everything felt pretty alright today.

Going to do some readings and prepare a little for my interview and go to sleep!

Art Elective

I registered for an art elective and was super happy when I got allocated the one I wanted! Hopped on the campus bus early in the morning.. around 8.10ish am (it's really early because my class actually starts at 9am -- yea you see the picture). Went for a spin in Giant when I dropped off at Canteen 2, yes only one bus stop haha we were just being lazy.

Stared at the whole ADM Building for a while because it's so pretty!! Like prettiest building in NTU no exaggeration. Finding my classroom was really challenging because my ADM friends just told me that it's on the second floor and when I finally found the classroom at 8.50ish am (thank god I decided to venture out earlier), the room was locked and I was like whatttttttt?!?!? Not knowing what to do as usual I continued to loiter until I decided that I got to ask someone. There was this dude filling his bottle at the water cooler.

He did some magical knocks on the door and it opened!! Haha okay I should have tried knocking the door.. I mean, who knew?! Hahaha class was pretty stressful actually with all the ADM students and me being one of the rare species of 2 non-ADMers. 

Class went pretty alright I guess. I was just awkwarding the whole lesson, can't warm up so fast alone... haha but that's alright more lessons to go!! Although I am seriously considering whether to drop the elective.. Hmm...

Headed to LKC LT for some GEM Explorer Talk, and I thought the boyfriend would be there but oh wells, disappointed again. Sat in and listened to all the technical stuffs and just praying that NTU will send me overseas!! PLEASEEEEE. I really need to get out of Singapore for one semester hahaha. 

Usual lunch at Canteen B and I just popped a banana for lunch and headed back to hall. Hall sweet hall. Guess I will be slogging in hall for the whole of today~~

Dinner with my domestic idiot PeiYun, as we whipped out amazing dishes again with the leftovers from our mega steamboat party on Monday. Hahaha XianDa and Natasha came to join us today and look at our amazing dishes. Hahaha stir-fry pork collar slices, omelette, and our wonder soup.


Looks pretty decent for starters right... Haha we will get better. Pardon the stingy random egg up there -- we had 2 eggs left in the fridge... so why not? Everything here. Is cooked with a pot -- told you we are good haha.


Here's out wonder soup, with so many ingredients and it taste oh-so-good (really) and it's simple to cook (super simple). Just throw all the ingredients into the pot and let it boil. This wonder soup has carrots, cabbage, scallops and last but not least, cheese tofu -- now you know why it's called wonder soup. So many ingredients!!!


Next will be our garlic stir-fry pork collar slices. After stir-frying them with garlic, we sprinkled generous amounts of pepper and for a moment, it tasted like bak kut teh meat haha. For a moment. The meat was tender and juicy and YUMMY!!

Jeremy popped by after dinner to pass me the pan. Yay we have a new cooking tool!! Maybe tomorrow or the day after. Time to restock my fridge!

Was on the phone with my ex-roomie for like an hour or so. Just talking and being annoyed and complaining and whining and thinking and laughing. It's always nice sharing and listening to her as we start to fill each other up since we haven't seen one another for so so long~~

Xianda texted me shortly after my call ended to ask for "an immense favour" - quoted directly from his whatsapp message. It was their monthsary and he had a surprise for her!!! So sweet right!! Haha so my job was to lure her out of her room into mine where he will be hiding and then he will surprise her!! AWWW~~~ PeiYun was an easy prey. Haha she just takes the bait and surprise herself.

Year 2 Sem 2

Technically, school started on 12 Jan, Monday.
Dingyi is a bum, she doesn't want to get Monday blues, so she didn't add any Monday classes.
So class starts on TUESDAY!!!

The first day of school wasn't as good as I thought it would be, but don't misunderstand, it was still awesome!

Woke up at 7.30am, all ready to do some readings when I fell back asleep. Not forgetting to mention, the 7.30am was a result of multiple snoozes... Finally managed to dragged my lazy body out of the bed at 8ish am and then I started my readings at probably... 8.30? And then I got distracted as usual and went on to check on other stuffs and then PeiYun came over and I decided the readings weren't exactly working and we decided to go to class earlier to get better seats which resulted in us leaving hall at 9.40am when our class is at 10.30am. Leaving super early for class checked. (first time ever).

Since we were so early and lazy and unwilling to bash through the dust cloud around the construction area (just being bimbos don't judge), we walked to Hall 1 and took the campus rider to TCT. Stoned at the benches around S4 for quite a while before heading to class - PeiYun, Xianda and Jeremy were in the same company law class (which I took last sem), so obviously I left to my venue alone to where I checked many days ago.

Went into my accounting class venue (sr7) and was warming my seat when. The prof announced her name and something didn't feel too right... My prof was a Choo and she was a Tan. SHUCKS. So I tried to login to my degree audit using my phone, which obviously failed because my phone can never log in to degree audit (sigh Sony sigh) so I was like texting my ex-roomie for help. AND I was sent a screenshot of my timetable -- it was the wrong venue. There was like this panic sweeping over me (no joke) and I was deciding between sitting through this class or leaving to my correct venue.

The awkwardness of entering a class late. But HEY I was early... :( Quickly settled down at the nearest seat and tried to look like I have been there since class started. Fortunately the prof just ignored me -- don't really enjoy the late attention..

After both my lessons which ended at 2.30pm, PeiYun and I decided that we needed garlic -- had to get them from Giant which is at the Hall 2 area. So we were walking to take a bus from TCT, when we saw THE BUS. And then PeiYun just abandoned me. And I had to chase her. Which means. I just ran for a bus. Running for a bus checked. (first time ever).

Bought garlic and salt and walked PeiYun to SRC for swimming.

Cooking was really funny because I only have a pot in hall. And we wanted to cook so many things. Sambal kangkong, fried cheese porkball, ham cheese omelette and pork belly with enoki mushrooms. They turned out really yummy and my mini rice cooker actually worked -- I was really amazed to be honest. I bought it without knowing how it works and so I called the seller to ask him how to cook rice HAHAHAHA such failure in life and then he had to teach me and it was a really funny conversation because I kept asking if it will really work. And it did!!! Yay awesome. Homecooked meal for Tuesday dinner.

Went to hibernate after dinner -- I'm such a pig, yes I know, and Jeremy texted me. And apparently I replied. But it was totally off the topic, shall not post a screenshot of it because it was so embarrassing hahaha. And then the confused Jeremy just continued talking his stuff and when I was finally awake to read all the messages I almost died laughing. Sleep text checked. (first time ever).

That pretty sums up my first official day of school for year 2 semester 2, not exactly the ideal because I was being so blur early in the morning but everything was made awesome because of everyone I met today! Yay!! Thankful for Jeremy and PeiYun for making it more awesome too! :D

Japanese Cheesecake


The cheesecake was really fluffy and creamy. Not too sweet and not bland, just the right taste(:

I have always been a huge fan for cakes, especially cheesecakes. Having tried the different types of cheesecake, ranging from the thick creamy new york cheesecakes to the fluffy japanese cheescake, I was hoping to try baking the fluffy type and I chanced upon this recipe online by Christine.

The cake is light, yet creamy. Definitely ideal to satisfy a snack craving or a meal in-between when you just want to savour the light taste of cheese.


Here's the recipe I used from :

Ingredients:
250ml milk (I used low-fat milk because I ran out of full-cream ones)
1 block of cream cheese, 250g - cubed and softened at room temperature
60g butter, softened at room temperature
6 eggs (separate into whites and yolks)
55g cake flour
1 lemon zest (I omitted this because I didn't have any lemons)
1/4 tsp cream of tartar
130g caster sugar (I used powdered sugar)

Preheat oven to 150 deg celcius.
Place a bowl over simmering water (don't let the bottom of the bowl touch the water) and add in milk and cream cheese. Stir occasionally, until all the cheese dissolves and mixture is smooth.
Stir in butter and remove from heat when all butter is dissolved.
Cool the mixture a little (ensures that egg yolks will not get cooked) and stir in the egg yolks.
Combine cake flour and corn flour and sift them into the mixture. Stir in the lemon zest and make sure there are no flour lumps.
Beat the egg whites with an electric mixer for 3 minutes, then add in cream of tartar.
Continue beating and pour in sugar and blend till stiff peaks form. (You will be able to turn the bowl upside down with the egg whites inside without spilling anything.)
Fold-in egg whites into the cream cheese mixture gently. Do not beat or stir, gently fold them in one-third at a time.
Pour the mixture into the baking pans. Place the pans into another larger baking tray and add hot water in the tray up to mid way.
Bake for 50 to 60 minutes, test with a needle or skewer that comes out clean
Turn off the oven and leave the door ajar for 10 minutes (this ensures that your cheesecake will not crack or collapse), remove from the oven and place on a wire rack to cool completely.
Chill in the fridge for 3 hours.

I followed the instructions on her web exactly, the only difference was that my egg whites were hand whipped because my electric beater broke down (sigh), so me and my brother were happily whipping away in the middle of the night. It was really crazy doing manual whipping of the egg whites so I think I wouldn't be making this any time soon until I replace my electric mixer.
