Tried to cook something new today! It's like an adventure everyday for me, googling and trying all the online recipes and then attempt to take instagram worthy photos of my cooked food. Haha and of course, making all my friends be food tasters. Still pretty new at this cooking thing.. some food don't turn out very well.. BUT at least I am trying!!! :D I am going to get better right?

Started school today with a ham cheese omelette sandwich for breakfast and lunch. Yea, lunch too because I have back-to-back classes this semester, specifically Tuesdays and Thursdays. I guess, this means I am going to lose weight this semester? AWESOME :D Sacrificed a little sleep and woke up a little earlier for class.. Around 9ish (not very early.. but considering that my class starts at 10.30am..) and made my way clumsily to the pantry.
My sandwich tasted awesome okay!! Because anything with cheese is awesome.
Haven't felt this for very long, because for the first time ever, I don't feel very lost in Accounting classes. Before you associate show-offs with me, do not the keyword: Very. Which means, I did feel a little confused here and there but generally I kind of understand? I think. Feels good to know what's happening actually, because I read up beforehand!! I will try to do more of such in future, but as you can see, it does require a lot of self discipline.. Like really a lot. I WILL TRY.
Tax was taxing as usual (so punny) but sort of understand some topics too and we got early release from class today! YAY!! Maybe the prof should do that every week. Haha give me something to look forward to in the 6-hour intense classes.
Dinner is cooking time as usual!! But the recipe calls for some ingredients that I haven't bought before so obviously I wouldn't have them -- onions, ketchup, eggs and cheese. Texted PeiYun and woohoo she bought them (except ketchup, we decided that we didn't need it haha) Initially I was thinking maybe Macdonalds have the packet ones.. but it was kinda far and I was being lazy as usual, so I gave it a miss. Who needs ketchup anyways? *flips hair*
Here's our modified recipe:
Chicken Omelette Rice
Ingredients:
1 medium onion (actually I have no idea whats the size of a medium onion.. My onion was like the width of half an iPhone - if that helps)
1 chicken thigh, rinsed and defrosted
1 tablespoon oil
freshly ground black peper
1.5 cups cooked rice (I used a small cup though - between the size of a shot glass and the normal rice measuring cup)
1 teaspoon of light soy sauce
Omelette (for one omelette)
2 normal eggs (those normal sized ones from supermarket)
Half an egg shell of water (alternatively, milk is fine)
1 tablespoon of oil
1 slice of cheddar cheese
Cut the onions into small pieces and dice the chicken.
Heat the oil in a pan with medium heat and stir fry the onions. When the onions softened, add in the chicken cubes until the are cooked.
Add the rice and continue stirring the food in the pan until all the rice separates into individual grains (make sure they don't clump together anymore)
Add in the soy sauce and make sure that the rice is evenly coated with soy sauce and everything.
After everything is evenly coated and all, add ground pepper and pour the food into a plate.
Rinse the pan and heat the oil with medium heat.
Beat the eggs and water and pour in into the pan.
Once the base of the egg is set, lower the heat and add the cheese slice into the center still watery mixture. Next, put the rice on top of the cheese.
Fold two sides of the cheese towards the center, kind of like a wrap. (The egg may not fully cover all the rice, it's alright.)
Continue cooking the omelette rice with low heat until desired egg consistency -- depends on whether you want to egg to be still watery or completely cooked.
Flip the egg onto the bowl and adjust the shape of the omelette.
Side vegetables are just broccoli and carrots cut into thick strips and boiled with a pinch of salt.
Ready to serve!!
It was really yummy!! No joke. Super nice. We gobbled up the food YUMYUMMMM :P
